CSA Summer Recipe: Vegetable Ratatouille

Wondering what to do with that abundance of CSA or farmers market vegetables? This ratatouille recipe kills two birds with one stone - ensuring you don't waste any errant vegetables and meeting your daily veggie quota. I used the local vegetables I had on hand but this recipe would also work well with mushrooms, eggplant or anything else that appeals to you. Ratatouille is a traditional French dish, but I have Italian in my blood so I used plenty of seasonings you might find in an Italian dish. I was really pleased with the results. Spring is almost here and it's time to consider where you'll get your local spring and summer produce. Community supported agriculture groups (CSAs) are one of the best ways! CSAs are an efficient means to get your produce directly from a local farm and cut out the middle man (grocers.) I love implementing the farm to table concept in my own kitchen, and have discovered lots of new veggies and fruit via CSA programs (rhubarb, swiss chard, and purple peppers to name a few!) Local CSA Looking for Volunteer ‘Pickup Hosts’ – Info Session 2/15

Lancaster Farm Fresh Cooperative (LFFC) is looking for volunteers to host weekly Community Shared Agriculture (CSA) deliveries of fresh, organic produce to neighborhoods in the Philadelphia area. Members purchase a subscription to receive a box of fresh, high quality produce from a local farm on a weekly basis.
