
Friday Quickie: Green Your Cinco De Mayo!
As Dictator of a Mexican Eating Club (or “Mexadelphia” as a few close amigos call it), I’m taking tomorrow’s fiesta with pride. How can you celebrate my 2nd favorite holiday the eco-friendly way?
Here’s a few sustainable celebration & vegetarian comida options:
- Change Food shares a vegetarian Enchiladas de Mole Verde recipe that has my mouth salivating.
- Vegetarian Times provides the secret to a Tortilla Lasagna recipe that has me psyched for cooking AND craving tropical fruit with their Grilled Plantains with Queso Fresco
- Real Simple’s Roasted Veggie & Refried Bean Tostadas have me saying “Ole!”
- Use those cage-free eggs & fair trade sugars for BHG’s Carmel Flan for dessert!
- Use sustainable booze, including tequila for those margaritas – Casa Herradura uses their waste for compost, waste-water treatment plant so their dirty water can be reused, AND a great recycling program. Del Maguey & 4 Copas Tequila are both organic options from south of the border.
- Want to entertain the kids (and adults) with a Piñata? Reuse an old tissue box & that tissue paper (given with gifts & Victoria’s Secret) and make your own Piñata!
