
Amazing Cabbage, Apple & Ginger Salad. Or the Best Cabbage Recipe. Ever.
So I haven’t always been the biggest cabbage fan. I never disliked it, but I have never been in love with it. Until I found the most perfect, delicious salad ever on health.com and modified it. And I am sharing my cabbage & apple salad recipe with you, lucky readers.
The ginger dressing has just the right amount of flavor to compliment the cabbage and apples. The fresh crunch and light flavor leaves you feeling refreshed. Plus, the salad just helps you feel totally healthy and better than a detox. (Says the girl who refuses to try a juice cleanse because she eats too much…)
Cabbage, Apple & Ginger Salad
Prep: 20 minutes.
Ingredients
- 3 tablespoons apple cider vinegar
- 1 teaspoon ground ginger (or use fresh if you so desire)
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon minced garlic
- 3 tablespoons extra-virgin olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 4 cups packed shredded cabbage
- 2 cups thinly sliced Granny Smith apple
- 2 teaspoons fresh lemon juice
- 1/4 cup dried cherries
- 1/4 cup toasted, unsalted sunflower seeds
Preparation
1. Whisk together first 5 ingredients (through garlic) in a small bowl. Whisk in olive oil, salt, and pepper; set aside.
2. Toss cabbages together in a large serving bowl. Toss apple slices with lemon juice to keep from browning.
3. Add apple, cherries, and sunflower seeds to cabbage. Toss with the dressing. Enjoy.
