Remember that Co-Op on Temple’s campus that I mentioned back in April? I’m here to report that the Rad Dish Café is still in the works, tightening the last nuts and bolts before their opening on Temple’s campus this October. The Café secured a spot in the coffee bar located in the Ritter Hall Annex and will continue to be run by students from the Fox, environmental studies, communications, geography and urban studies departments. Late night pizza calls, Chinese food runs, and endless burger or fries at the cafeteria are the epitome of college; eating healthy during these four years is extremely difficult. Desolate in North Philly, Temple students are especially further away from the convince of a fresh produces and healthy options. With the closest Whole Foods being two miles off campus, my fellow owls and I are stuck shopping at the pricey Fresh Grocer. Since Junk food is simply a phone calls away, what about options for different on-the go meals? For Temple students, there’s a place where you can have salads, sandwiches, fresh juices, trail mix and other sustainable snacks. Plus, it only serves food that is sourced locally within 150 miles of Philadelphia, AND functions as a zero-waste supply chain model. Sounds too good to be true, right? As a marketing major at Temple, I’ve struggled with how to bring “green” into my four short years at the Fox School. Although I know how to take the derivative of an equation, balance the debits and credits in my accounting homework, and create a fierce advertisement, something still felt like something was missing. One of the biggest challenges in the corporate world is convincing leaders or owners to incorporate sustainability habits into the workplace.  For the eco-minded individual, it can be a headache.  Finding out my prior employer took the 'recycle bins' and emptied them into the garbage frustrated myself and a colleague beyond belief (which inspired the birth of this very blog you're reading...) Rachael Kennedy recently completed her Low Car Diet with Zipcar, just like I did last year! We had a chance to ask her a few questions about her experience.
