Vegan Chocolate Mint Smoothie – Irish Quickie
St. Patrick’s Day is so close we can taste the green beer. After making your Irish holiday more sustainable, it’s time to kick back and relax with a delicious treat.
This vegan version of the shamrock smoothie will put those corn-syrup, ridiculously fat-packed shakes to shame.
Shameless Shamrock Smoothie:
- 1 banana
- 1/3 – cucumber
- 2-3 tablespoons – Mint leaves
- 1 tablespoon – carob chips
- 1 cup – nondairy milk (I used 1/2 c chocolate, 1/2 c unflavored.)
- 1 tablespoon – cocoa powder
- 1 tablespoon – ground flaxseeds
Simply combine all the ingredients in a food processor or blender and mix until smooth. It’s absolutely delicious and satisfies your sweet tooth!
I’ve been experimenting this week with the shake and even made this sweet Vine video. Humor me and watch it, especially since Pounce decided to knock my iPhone off the table and crack my screen right before I finished the damn thing. He’s as snarky as his guest post in real life, too.
Also – For the record, I tried experimenting with Peanut Butter instead of cucumber for the vine. The cucumber one tastes more minty than the PB version.
